Whole Wheat Bread

Here's a new recipe that I'm very happy about! It's 100% whole wheat, but it's NOT dry, crumbly, and solid like most whole wheat bread. It has weird things like lecithin, dough conditioner and gluten, so I didn't even want to try the recipe until my insistent sister gave me a loaf....and I was sold! I made my first batch and we ate four loaves in 24 hours! So here's the recipe if anyone wants to try it.






                                                100% Whole Wheat Bread

5 cups water
1/2 cup oil
1/2 cup sugar OR 1/3 cup honey
2 T. lecithin, rounded
2 T. dough conditioner
1 cup wheat gluten
3 T. yeast
5 cups whole wheat flour

Mix and let rest for 12 minutes.

Add:  
          1 egg
          1 T. salt, rounded
          6-7 cups flour

Knead for 8 minutes. You can let it rise or put it directly into pans. Let rise in pans and bake at 300* for 40-45 minutes. Before baking brush with mixture of 1 egg and a little water.
